Thankful - Day 2 and 3



**Schoolwork overshadowed my day yesterday so I'm catching up now ;o)

Day 2 and 3: I am thankful for the Cooking Channel

Before The Doc and I married, this young Southern Belle's dinner consisted of Mac and Cheese, Hot Pockets and Poptarts. The Starbucks across the street knew me by my first name and the Wendy's was at the point of giving me a discount for lunches and dinners because I was becoming their VIP customer of the year. It didn't help that I was an executive in a high profile grocery store for 7 years but I never shopped there and to tell you the truth, the grocery store scared me. If it wasn't pre-prepared, it wasn't fit to purchase.

That's right readers I couldn't cook and was scared to death to even try. The first time that I had The Doc over for dinner, specific instructions were for me to cook a home cooked meal. Deciding to go over the top, I was going to cook a rack of lamb, Brussels sprouts and baked red potatoes in a rosemary sauce. The rack of lamb was almost fried and chewy, the Brussels sprouts were cold and hard and well..The red potatoes could have gone for undercooked mashed potatoes. It was awful and most embarrassing. I think the only saving grace was the decorations because it took away from the bad taste. But that didn't stop him from finishing his plate and still asking to marrying me, if anything he told me it was the best meal he had in a long time. So either he had been eating complete garbage or he was just being nice. But all that has drastically change...

I found the cooking channel! And as I work on this new idea of being a housewife and mother, it truly has given me time to be able to play and learn how to cook! That's right my husband has gone from eating cold spaghetti and grilled cheese every night to steaks, meatloaf, baked chicken, homemade pies and bread. He's excited to come home now and every night he's just gushing over how my cooking as been.

So as we creep closer to Thanksgiving, I can defiantly devote two days to the idea that if we don't go to NYC. I'll be confident in cooking a Turkey, with all the trimmings ;o)
